I am still muddling along with my Celiac’s Disease diet. Mostly I’m struggling with not understanding that there’s wheat or another gluten in a prepared product. Today I did research on the topic. I got a mile long list as you’ll see below. I copied and pasted the list here because the site I got it from seems to be viral and I don’t want to have to look there again. It’s a better list than other places I’ve found. I am not ignorant of the first part of the list. I’ve avoided all those easily…it’s the lower list that’s caused me some trouble. I suspected the modified food starch might be wheat based. Now I’m sure and will avoid it…but some of these other ingredients…Holy shit! I’m not sure I can remember all this crap. Makes me think I really just have to not have any more prepared foods unless they specifically say gluten-free on the box, which is a drag because they can be time savers when you are tired or rushed:

I also found this from the Mayo clinic. It’s not as detailed as this previous list, though I found a notation that I’ll need to talk to my pharmacist about my other medications to make sure they are gluten-free. I’d already taken care of buying the right vitamins. Never thought of the prescriptions though! Boy…there’s a lot to this diet. Once I get it sorted out, I should feel better than I do now. Due to this odd ingredients list, I’ve ended up with exposures several times in the past two weeks. I’m getting it sorted out slow but sure though. I feel better than I did, but I could be feeling better if only I avoided these odd ingredients at the end here. For instance I’d no idea that smoke flavoring might have gluten in it. Wow…no more lox. Now that’s disappointing! And what the hell is maltose and why would Suet be in my foods?! What I struggle with at the moment isn’t symptoms with my belly…though I do have quite a bit of ongoing bloating and have had for years. What’s the struggle is the symptoms of the Vit D anemia. I am depressed. I am not the least unhappy. I’m not having any life issue that could make me feel even remotely unhappy. In fact, my life is full of joy and fun…it’s full of love and sensuality and I want to get up and engage my day…but I am still depressed. It’s the oddest sensation to be intensely happy and depressed at once. It is simply biological. So…I’m waiting it out, but I’m struggling with the effects of the depression.  Anything that causes me to feel the least overwhelmed is where the depression symptoms poke up their heads…and I can’t seem to get myself out of park. It’s horrid.

The other struggle is asthma. It can be quite severe following getting any gluten. It causes dizzyness and disorientation and it causes severe fatigue and I lose my ability to reason or think critically in terms of making an argument for a paper or holding large amounts of information together for writing a paper…and that adds to my overwhelm if that’s what I’m feeling overwhelmed about.

What a pain in the ass!

I have utter faith that once I’ve had no exposures for a while and this anemia is sorted out, I’m going to be glowing with health for the first time in many years. I know it…but I just have to get control of this diet first and wait for the supplements to work their magic…which would happen faster if I got the diet fully under control. Hopefully now I’ll be able to. It didn’t occur to me that gluten can be so hidden in some of these ingredients. If you know anyone with this issue, please pass on this stuff. It will save their health.
